Pumpkin soup

Pumpkin a storehouse of nutrients like vitamin A, C, potassium, full of antioxidants. Good to regulate sugars, BP, helps with cancer and various skin issues.

Here is an extremely yummy quick immunity boosting soup

INGREDIENTS
1 tbsp oil /ghee/butter
1 onion chopped
1 tomato chopped
4-5 clove of garlic
1/4″ piece of ginger chopped
1-2 green chillies
1 cup 250gm pumpkin chopped
½ tsp salt
½ tsp pepper, crushed
2 cup water

Method

🎃 Heat oil/ghee/butter in a pressure cooker add ginger, garlic and Chilli, saute for a few mins

🎃 Add onions and saute till they come transculent

🎃Add tomato saute for a few minutes

🎃Add 1cup pumpkin add ½ tsp salt and saute for a minute or 2 till it changes colour slightly.

🎃Furthermore add 1-2 cup water and mix well.

🎃Close the lid of the pressure cooker and cook on medium flame for 3 whistles

🎃Let the pressure settle, open the cooker and allow to cool lightly.

🎃Transfer to the blender and blend to smooth paste.

🎃Serve pumpkin soup sprinkled with black pepper, jeera powder and corriander.
